Thomas & Kristen Nock – The Byng Street Boutique Hotel

The Byng Street Boutique Hotel is the result of one family’s vision and passion to create a new level of luxury accommodation in Orange NSW.

Proprietors, husband and wife team Thomas and Kristen Nock have worked in the hospitality and service industry for all of their careers and have combined their skills and love of quality offerings to deliver the region’s most illustrious boutique hotel. The attention to detail is spectacular and the reviews are glowing.

The Byng Street Boutique Hotel is passionate about the Central West region and in particular with the high quality of food and beverage that is produced in the area.

Thomas Nock explains, “We feel that as a produce driven, farming area we should, wherever possible, promote the local product. Our feeling is that our guests are coming to experience the best the region has to offer, they want to be immersed in it and it’s our job to make sure this happens.”

Thomas and Kristen, work closely with the hotel’s chef to provide a two course, à la carte breakfast showcasing fresh local produce each day served in their beautiful Yallungah Dining Room. Depending on what’s in season, a locally sourced function menu is also available for guests staying at the hotel and their invited guests. The menus are written to encompass the best local produce that the Central West region has on offer. Even elements of the in-house mini bar, coffee and snacks have a local flavour.

Kristen elaborates, “We’re proud to champion the local region, its produce and producers. We present to our hotel guests not just the food on a plate but the back story of who, where and how the produce has been procured so that our guests go away with a unique story. They might even go and visit the producer’s farm gate whilst they’re staying with us.”

Thomas and Kristen, along with their kitchen team, feel extremely fortunate to have access to such remarkable, fresh produce in the Central West region – often delivered directly from the farm to their doorstep. They are proud to show off the fine, local purveyors, who are distinctly credited on all of their menus.

Thomas adds, “It’s really a win/win for us all … we source beautiful, fresh produce to enhance our menu with the quality this obviously provides and at the same time we support small, local, business and farmers.”

Thomas and Kristen are passionate about supporting the Farm to Org. movement and are keen to help spread the word to other Central West businesses. They appreciate there is some cutting of red tape involved but encourage the community to get behind and support such a network.

“We can’t argue with the many positive benefits not only for our guests’ experiences but also for our own family and children with the procurement and consumption of fresh, local produce. The health benefits, the distinctive cooking smells and tastes – there is a tangible difference and one we should not only be utilising but celebrating,” says Kristen.

They both agree how wonderful it would it be to see the Farm to Org. movement and model being applied more by Central West businesses and organisations.

“There are many aged care facilities in Orange as well as schools, wouldn’t it be encouraging if they started procuring produce locally for their kitchens and tuckshops? Imagine the health benefits to the aged care residents and school students. I know which lunch I’d rather my children were eating!” added Thomas.

“Not only is it good for us nutritionally but by sourcing local ingredients in our region for local organisations and businesses it would also help minimise the environmental impact on our region and help our local farmers and that’s got to be not just a good thing but a great thing!” concluded Thomas.
